Spinach, Mushroom & Feta Crustless Quiche

Spinach Mushroom Crustless Quiche


Ingredients
  • 8 oz. fresh mushrooms 
  • ½ tsp minced garlic 
  • as needed non-stick spray 
  • 1 (10 oz.) box frozen spinach 
  • 4 large eggs 
  • 1 cup milk 
  • 2 oz. feta cheese 
  • ¼ cup grated parmesan 
  • ½ cup shredded mozzarella 
  • to taste salt & pepper 
Instructions
  1. Preheat your oven to 350 degrees. If your frozen spinach is not already thawed, thaw it in the microwave. Empty the box into a colander and let it drain while you begin to prepare the rest.
  2. Quickly rinse the mushrooms and slice them thinly. Place the sliced mushrooms in a skillet coated with non-stick spray, add the minced garlic, and sprinkle a little salt and pepper. Turn the heat on to medium-high and saute the mushrooms until they release all of their moisture and no more water remains on the bottom of the skillet (5-7 minutes).
  3. Spray a pie dish with non-stick spray. Squeeze the rest of the water out of the spinach and spread it out on the bottom of the pie dish. Next add the cooked mushrooms and crumbled feta.
  4. In a medium bowl whisk together the eggs until fairly smooth. Add the milk, parmesan, and another small sprinkle of pepper. Whisk to combine. (This step can be completed while the mushrooms are cooking) Pour this mixture into the pie dish over the spinach, mushrooms, and feta.
  5. Sprinkle the shredded mozzarella cheese over top. Place the pie dish on a baking sheet for easy transfer into the oven. Place the quiche into the preheated oven and bake until it is golden brown on top and the center is solid. Every oven is different but this should take between 45 minutes and an hour. Slice and serve!

The key to preventing a soggy quiche is to reduce the moisture in your vegetables. This is why the spinach is squeezed dry and the mushrooms get cooked before adding to the quiche. I start by draining the spinach in a colander and then squeeze the rest of the moisture out before adding it to the dish.

Next, move onto the mushrooms. Sometimes pre-sliced mushrooms are the same price as whole, but not this time around.

So I washed and sliced my own. I usually cut them in half first (to get a flat surface) and then slice them.

Mushrooms are like sponges that are secretly holding a lot of water, so you need to saute them before adding them to your quiche. I just placed them in a skillet coated with non-stick spray (and a little garlic for flavor) and then sprinkled them with salt and pepper. Just a touch. The salt will help draw out the moisture.

Turn the heat onto medium or medium high and saute them (cook while occasionally stirring) until the water cooks out. This picture is about half way through the process. You’ll notice that the bottom of the skillet is covered with water that has seeped out of the mushrooms. Just keep cooking past this point until most of that water has evaporated off and the bottom of the skillet is relatively dry. This should take about 5-7 minutes, depending on how hot your skillet is. You can prepare the custard (egg and milk mixture) while you’re waiting for the mushrooms to finish.

Coat the inside of a 9 inch pie dish with non-stick spray. Squeeze the rest of the water out of the spinach and place it in the bottom of the dish along with the cooked mushrooms and feta cheese… in no particular order.

To make the custard, begin by whisking together four eggs until they are fairly smooth and uniform in texture.

Next whisk in the milk and parmesan cheese… and a little more pepper or any other herbs that you might like.

Pour the custard mixture over the vegetables in the pie dish. Oh, and the quiche is much easier to get in and out of the oven if it’s on a baking dish, so I put it on there before pouring in the liquidy custard mixture.

Sprinkle on more cheese (mozzarella in this case) if you want… again, I probably went overboard on the cheese but boy, was it tasty ;)

Bake the quiche in a preheated 350 degree oven until it is golden brown on top and the center is no longer liquid. This will take anywhere between 45 minutes to an hour depending on your oven. Just start checking it at 45 minutes. You’ll notice as it cooks that it begins to puff up a bit. It will deflate once it comes out of the oven but the “puff” is a good way to tell which areas are cooked and which are still liquid.

Ingredients
  • 4 cups vegetable broth 
  • 2 Tbsp olive oil 
  • 12 oz. fettuccine 
  • 8 oz. frozen chopped spinach 
  • 1 (28 oz.) can diced tomatoes 
  • 1 medium onion 
  • 4 cloves garlic 
  • ½ Tbsp dried basil 
  • ½ Tbsp dried oregano 
  • ¼ tsp red pepper flakes 
  • freshly cracked pepper to taste 
  • 2 oz. feta cheese 
Instructions
  1. Add four cups of vegetable broth to a large pot. Break the fettuccine in half to make stirring easier later, and then add it to the pot. Also add the canned tomatoes (undrained), olive oil, frozen spinach, onion (thinly sliced), garlic (thinly sliced), basil, oregano, red pepper, and some freshly cracked black pepper.
  2. Make sure the ingredients are submerged under the liquid, place a lid on top of the pot, and then turn the heat on to high. Allow the pot to come up to a full, rolling boil over high heat then remove the lid and turn the heat down to medium.
  3. Allow the pot to continue to boil over medium heat, without a lid, for 10-15 minutes, or until the pasta is cooked and most of the liquid has been absorbed. Stir the pot every few minutes as it cooks to prevent the pasta from sticking to the bottom, but avoid over stirring which can cause the pasta to become sticky and mushy. The pot must be boiling the entire time.
  4. After the pasta is cooked, crumble the feta cheese over top and serve.
**Do save adding the frozen spinach until the end so that it will defrost and heat quickly from the pasta’s residual heat. That way the spinach will stay bright green and pretty, and it will not darken the pasta as it cooks. But hey, either way it tasted fantastic!**

Start with four cups of vegetable broth. I use Better Than Bouillon soup base for all of my broths because it is much less expensive than boxed or canned broths and I can make any amount needed. These little jars last forever in the refrigerator, too, so it’s there whenever you need it. And no, I am not being paid to endorse it. :)

Then add this to the pot. I used half a bag, or 8 oz., of frozen spinach. I like to use the kind that is frozen loose in a bag because I don’t even have to bother thawing it, as opposed to the kind that is frozen in a block. Thinly slice the onion and garlic cloves. Add the entire can of tomatoes, juice included. I broke the fettuccine in half before adding it, so that it would be easier to stir later on.

Also add your herbs and spices. A half tablespoon each of basil and oregano, just a dash (about 1/4 tsp) of crushed red pepper flakes, and as much freshly ground pepper as you’d like. If you haven’t started to use a pepper grinder yet, you need to. The flavor is worlds away from pre-ground black pepper. These little disposable McCormmick pepper grinders are only about $3 and it lasts quite a while.

Okay, now that everything is in your pot, you’re ready to start cooking. Push everything down so that it’s submerged, place a lid on top, and then bring it up to a rolling boil over high heat.

Once it reaches a full, rolling boil, you can remove the lid, turn the heat down to medium, and give it a stir. Make sure it’s still bubbling away when you turn the heat down. It needs to continue boiling for this to work. Let it boil for 10-15 minutes, or until the pasta is cooked and most of the liquid has been absorbed or evaporated. Only stir once every few minutes to keep the pasta from sticking. Over stirring it can make the pasta overly mushy and sticky.

And then it’s done and it tastes amazing! Cool, huh?

Whenever I buy a block of feta, I go ahead and cut it into four equal pieces so that I already have 2 oz. portions ready to go. I keep the rest in a resealable plastic container in my fridge. Because feta is so potent, you really only need a little to add a lot of flavor!

Honey Mustard Pork Chops

Ingredients
  • ⅓ cup mayonnaise 
  • 2 Tbsp Dijon mustard 
  • 2 Tbsp honey 
  • ⅛ tsp garlic powder 
  • ¼ tsp smoked paprika 
  • ¼ tsp salt 
  • Freshly cracked pepper 
  • 1 Tbsp vegetable oil 
  • 2 lbs. pork chops (one-inch thick) 
Instructions
  1. Prepare the honey mustard sauce by stirring together the mayonnaise, Dijon, honey, garlic powder, paprika, salt, and some freshly cracked pepper (about 15 cranks of a pepper mill). Preheat the oven to 350 degrees.
  2. Use a paper towel to dry off the surface of the pork chops, then season each side with a pinch of salt and freshly cracked pepper. Heat one tablespoon of vegetable oil in a heavy skillet over medium-high heat. When the skillet is hot add two pork chops at a time and cook until golden brown on each side (3-5 minutes). Place the browned pork chops in a casserole dish coated with non-stick spray.
  3. Smear the honey mustard sauce over the surface of the pork chops in the casserole dish. Bake for 30 minutes in the preheated oven. Remove the chops from the oven, then set the oven to broil. Move the oven rack so that the surface of the chops will be about 6 inches from the broiler. Broil the chops for 3-5 minutes or until the surface is golden brown and bubbly. Serve hot.

Honey Mustard Sauce Ingredients

Start by mixing up the honey mustard sauce. Stir together 1/3 cup mayonnaise, 2 Tbsp Dijon mustard, 2 Tbsp honey, 1/8 tsp garlic powder, 1/4 tsp smoked paprika, 1/4 tsp salt, and some freshly cracked pepper (about 15 cranks of a pepper mill).

Then you have a really delicious honey mustard sauce that you will have to restrain yourself from licking off the spoon. Set it aside and try to forget about it for a minute.


Pork Chops

I used these rib center cut chops because they were the best price at the store that day. You can do bone-in or boneless, just as long as they are about one inch thick. 


Season Pork Chops

Start preheating the oven to 350 degrees. Also, prep a casserole dish by coating it with some non-stick spray. Use a paper towel to dry off the surface of the chops (this helps them sear better), then season each side with a pinch of salt and some freshly cracked pepper.


Sear Chops

Heat one Tbsp vegetable oil in a heavy skillet over medium high heat. Use cast iron or stainless steel. Try to avoid non-stick skillets for this because they don’t sear meat very well. Once the oil is hot, add two chops at a time and cook until golden brown on each side. If the meat sticks to the skillet when you try to flip it, that means that it is not browned yet. It will release from the pan when it achieves a good sear.

After browning the chops, place them in the prepared casserole dish. Smear the honey mustard sauce over the surface. Bake in the preheated oven for 30 minutes to finish cooking through.

After baking they weren’t very pretty, so I decided to finish them off under the broiler. This last step definitely made the chops a winner. I used the back of a spoon to slightly redistribute the honey mustard sauce first. Adjust your oven rack so that the top of the chops will be about 6 inches from the broiler, turn the broiler on to high and cook them for 3-5 minutes, or until they’re nice and browned around the edges and the sauce is bubbly. SO GOOD.

So yummy! I served the chops with some Smoky Roasted Sweet Potatoes and rice. Rice is really good to kind of soak up the extra sauce. Mmmm.
